This baked chicken breast recipe is an easy to make one pan meal. Tender chicken breasts with sweet honey mustard glaze, sautéed red onions and mozzarella cheese.
Chicken is the perfect canvas to use in creating a healthy and flavorful meal any day of the week. Whether you use dark meat or white is usually a matter of personal preference and taste.That being said, a baked chicken breast recipe like this one is going to be lower in saturated fat and calories than one made with dark meat chicken.
Honey mustard chicken is quick and easy to make, too. You really can’t go wrong with a one pan meal like this! The simple honey mustard glaze is key to the flavor of this meal.

Some people avoid makingbaked chicken dinners, claiming the chicken is too dry to enjoy. It’s true that dark meat is typically juicier than the white meat. But that doesn’t have to be the case! These baking tips will help ensure that you have tender, juicy baked chicken breasts.
- Flatten the surface.One end of a chicken breast is usually much thinner than the other. To avoid over cooking, use the flat side of a meat mallet to lightly pound the breasts to an even thickness.
- Cook at a high temperature.Breast meat is very lean, so if you leave it in the oven for too long, it can dry out quickly. It’s best to cook at a higher temperature for a shorter period of time. As a result, the juices will quickly be locked into the meat.
- Use an instant read cooking thermometer.It’s nearly impossible to judge the doneness of chicken by appearance alone. Make the job easier by using a meat thermometer. Insert the probe into the thickest part of the breast to take the internal temperature. This baked chicken breast recipe calls for a cook time of 30 minutes. However, the honey mustard chicken is ready to remove from the oven when the internal temperature reaches 163°F. The chicken will continue to cook as it rests, causing the temperature to rise to a food safe temp of 165°F.

This Baked Honey Mustard Chicken Breast recipe is an easy to make one pan meal that has tender chicken breasts baked over sautéed red onions and mozzarella cheese and basted with a honey mustard glaze.

Ingredients
- 4 chicken breasts 2 lbs boneless and skinless
- 1 medium red onion sliced thin
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 8 oz fresh mozzarella cheese sliced
- 1/4 cup honey
- 4 tbsp grain mustard
- 1/4 cup chopped parsley
Instructions
Preheat oven to 400°F. In a small bowl mix together the honey and grain mustard. Reserve half in separate bowl. Set both aside.
Place thinly sliced red onion in a rectangle 9×12″ casserole dish that has been sprayed with cooking spray or olive oil. Add the chicken breasts on top of the onions.
Sprinkle the chicken with kosher salt, black pepper and garlic powder.
Baste chicken with half of the honey mustard glaze.
Add 2-3 slices of fresh Mozzarella cheese on top of each chicken breast.
Bake for 30 minutes, depending on the thickness of your chicken breasts. (See Note 1)
Allow to rest 5 minutes before slicing or serving. When serving, top each chicken breast with sautéed onion slices and fresh chopped parsley. Drizzle remaining honey mustard glaze on top of each chicken breast. Serve on its own, over steamed rice, pasta of choice, or roasted potatoes.

Notes
- If chicken breasts are too thick (1 inch or more), slice in half horizontally and pound between sheets of plastic wrap for even thickness. For best results, use an instant read thermometer, the chicken is cooked when it reaches internal temperature of 165°F.
