These Cauliflower Breadsticks are a low carb, gluten free alternative to regular bread sticks. This easy recipe can even be used as a pizza crust.
Here I go again with a cauliflower recipe for you to try. I’ve mentioned that I have had a little fixation with it since making Cauliflower Rice Pilaf for the first time.
I have been wanting to try making cauliflower bread sticks(or cheese bread) for a while and this recipe is so simple. It’s a great way to get a little more nutrition from a vegetable snuck into meals too!
All you have to do is pulse chopped cauliflower in a food processor until it resembles rice. (if you don’t have a food processor, you can use a hand grater).
Then cook it for a few minutes in the microwave, squeeze excess water out using a cheesecloth, then mix in the other few ingredients (garlic powder, oregano, eggs and cheese) and bake it in the oven.
Serve it with some of thishomemade marinara sauce for dipping if you’d like. It’s fabulous! We, unfortunately, scarfed it down right out of the oven, to be honest.
A big bonus is that you can use this as a healthy option for pizza crust too. However, it is recommended to flip it over halfway through baking for a pizza crust so it’s more crispy before adding the pizza toppings.
How to Make Cauliflower Breadsticks
Preheat oven to 425 degrees F
Cut cauliflower head into smaller pieces and pulse in a food processor. You want it to resemble rice.
Place in a microwave-safe bowl, cover, and microwave for 10 minutes.
Add all other ingredients to a large bowl and blend well.
Add cooked cauliflower to other mixed ingredients and mix well.
Line 2 baking sheets with parchment paper
Divide the cauliflower mixture in half and spread the baking sheets. I make mine into a rectangle shape. You want it to be thin!
Bake at 425 degrees F for 25 minutes.
If you’d like it a little extra cheesy, sprinkle with additional cheese and bake again until the cheese is melted.
You can use frozen cauliflower that is so widely available now. The key is to get as much of the water out of the cauliflower as possible. You can even use a nut bagor cheesecloth to make this step easier.
Pro Tips:
You can also bake the cauliflower in the oven for 20 minutes at 375 degrees F.
As mentioned above, be sure to squeeze all the water out of the cauliflower. Up to a cup of liquid is expected.
