This crispy topped tuna mornay recipe is so easy to make in your Thermomix.
It has been a family favourite for over 20 years. Pre-Thermomix days it was a ‘go to’ quick and tasty meal, now it’s even quicker and still just as tasty.
Recipe inspired and tweaked from a Women’s Weekly cookbook to be made in the Thermomix.

ThermoFun - Crispy-Topped Tuna Mornay Recipe

Ingredients
- 1 lemon, rind + 2 teaspoon juice
- 100g cheddar cheese, cubed
- 1 onion, peeled and halved
- 20g olive oil
- 30g plain flour
- 1 teaspoon dry mustard
- 300g milk
- 100g small macaroni
- 425g can tuna, drained
- 125g can corn kernels, drained
- 45g packet potato crisps
- fresh chopped parsley for garnish
Instructions
- Preheat oven to 180°C. Grease a casserole dish or individual ramekins.
- Place lemon rind into TM bowl and zest 10 sec / speed 9.
- Add cheese and grate 10 sec / speed 9. Set aside with lemon zest.
- Place onion and oil into TM bowl and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add flour and mustard and cook 30 sec / 100°C / speed 1.
- Add milk and cook 2 mins / 100°C / speed 1.
- Add macaroni and cook 10 mins / 100°C / speed 1 / Reverse.
- Add tuna (or cooked shredded chicken) corn, lemon juice and half the cheese/zest mix and mix 30 sec / speed 2 / Reverse.
- Spread tuna mixture into casserole dish or ramekins.
- Roughly crush crisps (while still in packet) then combine with remaining cheese/zest mixture.
- Sprinkle onto tuna mixture and bake for 15 mins or until golden brown.
- To serve, garnish with parsley.
Notes
You can substitute cooked shredded chicken for tuna in this recipe.

This is voted the Top 5 Thermomix family dinner recipe by my kids. I always have to double the recipe otherwise there’s arguments. The only recipe sub i make is to use frozen peas and corn mix. Thank you for the many years of having this quick and easy popular recipe at hand. It’s a real winner!

I was looking for a isolation friendly salmon mornay and came across this recipe. Im not usually a fan of salmon mornay but this was a hit! Everybody loved it, the only problem according to my husband was that there wasnt enough left for seconds :)

I made this tonight! I grew up with this dish...has to have the crisps on top!
I swapped corn for peas - simply because I'm the only one in our house that eats corn!
Everything worked perfectly - delicious to boot!
Only thing...and this may be my mistake? The lemon flavour was quiet strong, i zested the whole lemon...is this correct?

Hey Narelle, pleased to hear you enjoyed an old childhood favourite. The whole lemon zest is correct however all lemons can vary considerably in their taste of the zest and the amount of juice they all have. So I'm thinking you had a particularly strong one. Hopefully next time your lemon won't be as strong. :)

Hi Rebecca, sorry I really can't advise as I haven't used gluten free pasta with this recipe. I'd still be tempted to try it if you are not making dinner out to impress guests! lol! Do let me know how it goes. :)

Quick and easy meal on the table within 1/2 hour, now that’s my type of meal!
Didn’t have mustard powder, so used 1 tsp Dijon mustard and it turned out just as nice.

Really annoying that you don't mention removing lemon zest and cheese after blitzing them, somthey form part of the sauce from the beginning... when I realise down they should be added later, I stopped trusting the recipe and did it my own way.
It might seem like common sense and I did wonder, but since the zest and cheese instructions instructions were no different than for the onion, I proceeded. Most recipes make these things very clear so I guess I've allowed that to influence me.

Hi Ali, I'm sorry that you got confused with the recipe. In step 3 it does say to set aside which means remove. Then in step 9 half of the cheese and zest gets added back into TM bowl, then the remaining half is used in step 11 combining with the crisps. I hope it was a meal enjoyed by you.

Made this for dinner for hubby and myself. The absolute BEST Tuna Mornay we have tried. Loved it - and will make it a staple in our household. So easy to make. Husband asked what was making it crispy. I told him it was his last packet of potato crisps. He thought for a moment, and said, yeah it was worth it. Thanks Leonie for another great recipe.

this was so easy, and so delicious. I didn't have potato crisps for the topping so I used pretzels which I chopped at the beginning. I love the crunchy texture. A quick easy dish when you need dinner on the table in a hurry :-)

Great recipe! I made Chicken Mornay tonight using this recipe as a guide, swapping out the tuna for about half a roast chicken, chopped roughly. I didn't have any mustard powder or potato crisps on hand so I replaced them with American mustard and wholemeal breadcrumbs. I also left out the lemon.
After adding the milk to the onion/flour/mustard, the mixture became thick fairly quickly so I ended up adding about 100ml of veg stock once the macaroni was added. Next time I'll just use a little less flour and/or keep the MC on while cooking the onion - a fair bit of steam had escaped while cooking this bit. Will definitely make this next time using tuna - no doubt it will quickly become a family favourite.Reply

This is a lovely recipe! Made it tonight and will definitely make again! Didn't have chips for the topping but used Panko breadcrumbs! I had used a wee bit more cheese only because I grated what I had left in the fridge! I didn't have corn so substituted peas and used Dijon mustard as I didn't have dry mustard. All in all very happy with your recipe! Thank you for sharing!

Made this last night for hubby & I. Very good, right amount of flavour from the lemon. Made the topping out of cubed wheat bread mixed with fresh herbs a splash of oil and the remaing cheese. Will be making again

Hi there. I made this recipe tonight and it was fantastic!! I have been doing Weight Watchers for almost a year now and so I adapted it to make it a little more WW friendly, and it was just amazing. The kids gobbled it all up! I'm really glad I found this page, I am not terribly adventurous with my cooking so I need very clear instructions but was started to get a bit bored with the EDC. Yes, unfortunately the chip topping had to go. In order to make it a WW recipe, I used 50grams of light cheese in total. Instead of the chip topping I used a quarter of cup of wholemeal bread crumbs and I used a bit less tuna. Next time I will use about half the tuna. I also used skim milk not whole. I divided it into six portions (although the kids had seconds) and based on this, it came to 6 propoints per serve. A great nutritious and super yum dinner :-)

must have done something wrong as not enough liquid to cook pasta, might cook pasta separate next time and add it with the tuna. Added extra onion, cheese and milk, also added salt, pepper and smokey paprika. It made heaps.
